Project Description: Training the Chefs is a project of the Vegetarian Society of El Paso to veganize El Paso. El Paso is located on the US/Mexico border and has a predominately Hispanic population. Food availability in our local restaurants, schools, and hospitals is highly influenced by the traditional Mexican diet of northern Chihuahua that is meat and cheese centered. This diet has serious health impacts for our residents. A recent study of our U.S.-Mexico border community found that obesity, poor nutritional intake, and lack of physical activity are major public health concerns. We believe the most effective way to solve this health challenge is to educate those that feed our population about the numerous benefits of a plant-based diet.
This project will host an educational workshop for local chefs (from restaurants, school lunch programs, a culinary program at the community college, hospitals, and assisted living facilities) on the benefits of a vegan diet so that they can add tasty, hearty, and healthy vegan options to their menus.
