“After 15 years as a horticulture professor, Valerie Loew wanted to turn landscaping into lunch. She had grown disillusioned with tending ornamentals that required intensive resources – watering, mowing, trimming and fertilizing – but gave nothing in return. Valerie Loew was tired of putting her time and energy into ornamentals. She is now a “foodmental” who grows edible plants that are also ornamental. “I decided if I was going to water it, I might as well be able to eat it,” Loew said. “Aesthetics just isn’t enough anymore.”
